Peppered Mahi Mahi

Prep & Cooking Time: 20 min. Yield: 1 servings Serving Size: 3.000 ounces 2 Tbsp fresh basil 2 Tbsp olive oil 1/2 cup raw scallions 1/3 cup raw, sweet red pepper 1/3 cup raw, sweet yellow pepper 4 oz raw fillet of mahi mahi 3 Tbsp balsamic vinegar Directions: 1. Poach fish for 5-10 minutes, set aside 2.
