1/2 cup raw scallions
1/3 cup raw, sweet red pepper
1/3 cup raw, sweet yellow pepper
4 oz raw fillet of mahi mahi
3 Tbsp balsamic vinegar
Directions:
1. Poach fish for 5-10 minutes, set aside
2. Saute red pepper, yellow pepper, scallions, basil and balsamic vinegar in olive oil until ingredients appear "roasted", serve sauteed mixture on top of mahi mahi and serve
