Pasta Shells with Turkey Sausage and Peppers
Rather than calling for actual turkey sausage, this recipe uses ground turkey, garlic and fennel seed as a healthier but just as tasty alternative. This is one of those easy, family-friendly meals that you're bound to make again and again.
Servings: 4
Ingredients:
* 8 ounces medium pasta shells
* 1 pound ground turkey
* 1 teaspoon salt, divided
* 1 onion, chopped
* 2 red bell peppers, cored, seeds removed, cut into 1-inch pieces
* 1 green bell pepper, cored, seeds removed, cut into 1-inch pieces
* 2 garlic cloves, minced
* 1/2 teaspoon fennel seeds
* 1/8 teaspoon pepper
* 1 tablespoon olive oil
* 1 cup chicken broth
* 1/4 cup chopped flat-leaf parsley
Directions:
Cook the pasta according to the package directions.
Meanwhile, in a 10-inch nonstick skillet, cook the turkey with 1/2 teaspoon of the salt over medium heat, breaking up pieces of turkey, for 4 to 5 minutes. Remove from the pan. Cook the onion, peppers, garlic, fennel seeds, remaining salt and pepper in the oil over medium heat until golden, about 5 minutes. Add the chicken broth; bring to a boil and cook, covered, for 10 minutes, until tender. Stir in the pasta and turkey; cook until heated through, about 1 minute. Top with the parsley.
