Marinated Skirt Steak
You might want to save this recipe for the weekend and make Dad a steak that's so wonderful he'll never suspect how quick and easy it was! Just warm some rolls or bread -- on the grill for extra flavor -- and toss a green salad, and dinner's ready.

Ingredients:
* 1/8 cup soy sauce
* 1/8 cup Worcestershire sauce
* 1 teaspoon minced fresh ginger
* 1 teaspoon fresh rosemary leaves
* 3/4 pound skirt steak
Directions:
Mix the soy sauce, Worcestershire, ginger and rosemary in a nonmetallic bowl. Place the steak in an airtight plastic bag and pour the marinade over it. Marinate overnight in the refrigerator.
Grill or broil the steak until cooked to the desired doneness, approximately five to seven minutes per side for medium.
Notes: Leftover skirt steak can be eaten with sauteed onions and peppers on a Portuguese roll or Italian bread or in a flour tortilla. For a tortilla, be sure to cut the steak into strips. This sliced steak could also be used in a stir-fry with snow peas, bean sprouts and scallions, seasoned with additional soy sauce.
