This hearty meal can serve as a great side to any dish or as your dinners main course. Also try it hot or cold. What a versatile dish.
Ingredients:
2 skinless chicken breasts
3 sticks celery, chopped
1/2 onion, chopped
16 oz chicken stock
1 large lemon
1/2 cup mayonnaise
2 cloves garlic, chopped
2 cups couscous
2 tbsp salt
Directions:
Boil chicken breasts, cooking until done, and set aside to cool. In sauce pan, saute onion, garlic, and celery until onion is slightly translucent. Add chicken stock bring to a boil. Add couscous cooking until fluffy like rice then set aside. In a mixing bowl combine mayonnaise, zest of one lemon, juice of same lemon, salt and pepper to taste. Add mayonnaise mix and cubed chicken to cooked couscous. Fluff together with fork. Serve warm or cold.
