Fresh Apple Cake
1 1/2 cup vegetable oil
2 cups sugar
4 eggs
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
3 cups apples, chopped
1 teaspoon vanilla
Topping:
1 1/2 cups brown sugar
1 stick butter
1/2 cup nuts, chopped
3 teaspoons milk
Blend oil and sugar together. Add eggs, one at a time, beating well after each addition. Sift together dry ingredients and add to egg mixture. Stir in apples, pecans, and vanilla. Pour into a greased and floured 10-inch tube or bundt pan. Bake at 350 degrees for 1 hour.
TO MAKE TOPPING:
Place all ingredients in saucepan and bring to boil. Cook until soft ball stage (234 degrees). Pour topping over warm cake.
