* ¼ cup (½ stick) butter or margarine, divided
* 6 small boneless skinless chicken breast halves (1½ lb)
* 1⅓ cups water
* 1 pkg (10 oz) frozen mixed vegetables
* 1 pkg (6 oz) Stove Top Lower Sodium Stuffing Mix for Chicken
1. Melt 2 tbsp of the butter in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove from skillet; cover to keep warm.
2. Add water, vegetables and remaining 2 tbsp butter to skillet; bring to boil.
3. Stir in stuffing mix just until moistened. Top with chicken; cover. Reduce heat to low; cook 5 minutes or until heated through.
