NGREDIENTS 1 refrigerated ready-to-bake pie crust (from a 15 oz box of 2) All-purpose flour 3⁄4 cup packed light brown sugar 3⁄4 cup light corn syrup 3 large eggs 3 Tbsp butter, melted 1 1⁄2 tsp vanilla extract 1⁄4 tsp salt 2 cups pecan halves, including 1⁄2 cup chopped 1⁄2 cup semisweet chocolate chunks Coffee ice cream or whipped cream Ground nutmeg PREPARATION 1. Place oven rack in lowest third of oven. Heat oven to 350°F. Dust both sides of pie crust lightly with flour. Fit crust into 9-inch pie plate; turn edge under and crimp. 2. In large bowl, whisk brown sugar and corn syrup until smooth, breaking up any lumps of sugar. Add eggs, butter, vanilla and salt. Whisk until smooth. Stir in pecans and chocolate chunks. Pour filling into crust. 3. Bake 30 minutes; cover edge of crust with foil if browning too quickly. Bake another 10 to 20 minutes, or until filling puffs. Cool completely on wire rack. Serve with ice cream or whipped cream with a dash of nutmeg.
