2 Tbsp plus 2 tsp fat free thousand island dressing
8-12 raw scallions, cut both ends, leave stems
4 ready-to-cook, no added salt, corn tortillas
6 oz raw, ground beef, 75 % lean
1/2 cup low sodium, shredded, swiss cheese
Directions:
1. Brown ground beef in pan to form crumbles. When done, pour in a strainer and run under water to rinse excess grease. Wipe pan and return ground beef to low heat to keep warmWarm tortillas in microwave (15-30 seconds) or oven (1-3 minutes)
2. Wash scallions and trim both edges, leaving stems. Spread 2 tsp of thousand island dressing on each tortilla, line 2 or 3 scallions going in opposite directions on tortilla, add beef and cheese
3. Roll wrap, use toothpick if necessary to hold closed. Place in warm oven for 2-3 minutes or microwave for 15-30 seconds, until cheese begins to melt
